Plans for the Summer

Since the weather is finally feeling summer-y again, I thought I'd blog about my plans for the summer!

Something that will take up a big chunk of my summertime is my job. I work for Champion Cheerleading, a cheer camp for middle and high school cheer teams hosted at Alma College. This summer will be my second year on Champion Staff and it's going to be great! We do things like teach cheers and stunts, spot tumbling skills, put on seminars, coach teams, and watch cheerleaders compete in the cheerlympics. My #ChampsLife will likely be something I blog about more in the future.

Since I love to read books, I without a doubt plan to turn some pages with my time off from school this summer. Reading for leisure is always a little difficult for me to do during the school year since there's so much to be done. Any book recommendations will be considered! Just let me know :)

Like I said in my first blog post, I really want to try out lots of Pinterest recipes and crafts. What better time to do so than summer? I even have a special secret board for the specific crafts and foods I want to make this summer that I've been pinning to the past few weeks. Along with making said food and crafty things I hope to blog about most of them as well.

Being 4.5 hours away from Home Sweet Holland this year at college made me super excited to spend a lot of my time this summer hanging out with my friends from high school as well as my boyfriend!

Another thing that I'd like to devote some of my summer to is running and working out. I ran a 10k race this past fall while at school and I'd really like to run another one this summer. A half marathon is also something on my bucket list for my life as a college student so maybe I could train and run one early in the fall. We'll see!

My "reach goal" for the summer is rather far-fetched considering I'm pretty busy, but I'd REALLY like to go to Cedar Point! I haven't been since before the 2 more recent coasters have been built and I'd really like to ride the 3 roller coasters there that I haven't yet ridden so that I can say I've ridden them all. I absolutely LOVE roller coasters and grew up going to Cedar Point several summers of my childhood.
The newest coaster (new this year), Gate Keeper

This short list of things to do this summer doesn't even get me started... There's so much to do!

Cookie Monster!

Here's the deal. If there's one food for you to know that I couldn't live without... I would most definitely choose peanut butter. My best friend in college is allergic and I have no idea how she's survived without it's for 19 years.

Another thing to know about me is that I avidly use Pinterest (who doesn't?) and love to pin healthy recipes (even though I rarely actually make them). However, this summer is going to be different. I plan to try dozens of healthy Pinterest recipes and blog about them!

First up on the list, "3 Ingredient Peanut Butter Cookies"! Simple enough right? I'm not much of a chef, and I usually manage to mess everything up somehow so even the thought of 3 ingredients makes me nervous. I didn't want to use up too much of my beloved jar of JIF, so I halved the recipe.

Original Recipe:
1 cup peanut butter
1 cup sugar
1 egg
1 teaspoon baking soda
Bake at 350 degrees for 10 minutes

I mixed up my (halved) ingredients, and to my surprise, it looked like actual cookie dough! I felt accomplished already. Then I put it in slightly flattened balls on a cookie sheet and  baked as the directions said.

Voila! They turned out great; delicious, chewy, and even tasted just like the pre-packaged non-sense peanut butter cookies my mom used to make! I'd consider this recipe a HUGE success :)

Have a great day!
